Sweet Potato Toast

I have been having the best lunches lately because I’m home to make them. My favourite thing to have is an egg on toast, but after awhile that’s eating a lot of bread. As someone who’s Italian I love my bread, but it can definitely add up. So I made a bread substitute I love to have is: sweet potato toast!

Yields: approximately 6 pieces (2 smaller, and 4 medium sized ones)

  • 1 large sweet potato

  • Extra virgin olive oil to drizzles

  • Himalayan pink salt and pepper to taste

  • Spices to season - I used: paprika, garlic powder, vegetable seasoning

Preparation

  1. Preheat the oven to 400 degrees

  2. Wash and peel 1 large sweet potato

  3. Cut them into longitudinal strips, approximately 4-6 pieces

  4. Drizzle the extra virgin olive oil over the potatoes front and back, and sprinkle the salt, pepper, and spices

  5. Place in the oven for 20 minutes, flipping half way through. Test the sweet potatoes with a fork, they should be tender but not too soft

  6. Enjoy!!! Top with whatever you like — my favourite is avocado, and an over easy egg like I showed above! I also put a green goddess sauce on the avocado, which is a a cilantro and jalapeño blend, and topped it with fresh cilantro.
