Raisin Bread French Toast Apple Grilled Cheese

As the title suggests there is a lot of things going on. But let me tell you: this is. So. Freaking. Good. It is a hybrid breakfast/brunch/dessert creation, based on this delicious dish that my best friend and I used to get in undergrad (until one day they just stopped making it???) – SO I made my own.  Since I am not a chef, or food blogger, here is the general guesstimate of how to make this.

Yields: 4-5 servings (depending on hungry you are, and can be modified to make more or less)

Ingredients

Apple Topping

  • 3 apples

  • 1 tablespoon butter

  • 1 tablespoon brown sugar

  • 1 tablespoon maple syrup  + extra to drizzle afterwards

  • Cinnamon to sprinkle on top

French Toast

  • 10 slices of raisin bread

  • 3 eggs

  • 2 tablespoons milk

  • Mozzarella cheese (approximately 3-4 slices per toast, you can try other types of cheese too!)

Preparation

Apple Topping

1.  Peel apples, and slice into thin pieces. We use a mandolin to slice it, but it can be done in bigger pieces as well.

2.  Melt 1 tablespoon of butter on a frying pan on medium heat, and add the apples in and cook until they start to get soft

3. Add in the brown sugar, maple syrup, and desired amount of cinnamon - mix until evenly coated. Season to taste with more ingredients as needed.

4. Cook until the apples shrink, and are soft - leave on low heat, stirring occasionally
 

French Toast

1.  In a bowl, combine eggs, milk, and cinnamon - mix together. 

2.  Dip each side of the bread in the egg mixture, and place on a pan or griddle

3.  Cook on medium heat, until each side is golden brown

4.  Repeat until all your bread is done!

5. Add the cheese slices to the desired amount of toast, and leave on low heat until the cheese starts to melt (we usually do half with cheese, half without, although personally I like mine both with cheese)

6. Assemble - one slice of cheese french toast, add apple topping, and drizzle with maple syrup. This can be repeated with another slice and then stacked together to make a sandwich, eaten open faced, or have extra pieces of plain (aka boring) french toast in addition + eaten with bacon on the side.
