Easy Peasy Spaghetti

I’m Italian and let me tell you, we love our pasta. I could live off it… which is why I try to refrain from eating it everyday. So when I do I want it to be GOOD, I’m just trying to make my nonnas proud over here, because realistically if I could eat theirs I would, they make it so much better than I do. But here is the next best thing. Something delicious, easy,

Yields: approximately 3-4 servings (depending on hungry you are, tbh I ate it all over like 2 days, it also can be modified to make more or less)

Ingredients

  • 1/2 of a 900 g pack of spaghetti (I used lancia)

  • 1/2 of a 680 ml jar of strained tomatoes (I used unico)

  • 1/2 white onion, diced

  • 1 clove of garlic, pressed

  • Salt and pepper to taste

  • Spices to season, I like oregno and if I feel like it chilli flakes

  • Drizzle of extra virgin olive oil (EVOO)

Preparation

Pasta

1. Boil water, make sure to add salt to it

2. Follow the instructions on your package of pasta, usually it will say to cook pasta for 8-10 minutes. I recommend doing less because it will also cook in the sauce. *while the pasta is cooking, make your sauce

Sauce

1.  Drizzle EVOO onto large frying pan on medium heat

2. After a few minutes as the pan is warming up, add the pressed garlic

3. Add diced onions and let cook until they are half cooked (becoming more transparent and fragrant, for about 5 minutes)

4. Pour about half of the strained tomatoes into the pan, make sure to continuously stir so it doesn’t burn

5. Season generously with salt, pepper, and spices while stirring

Get the Spaghetti Ready

1. Strain your pasta

2. Slowly add the pasta into the frying pain to your desired pasta to sauce ratio, I like my pasta real saucy. Season with more salt, pepper, and spices to taste.

Bonus: throw some buttery garlic bread on the side with some fresh garlic on toasted Italian bread - straight up my family never does this like they show in the movies, slash at restaurants, but sometimes you gotta live a lil.
